Did you know that Spain is the largest producer of olive oil in the world, and 80% of it comes from the region of Andalusia?  Because of this, Sevillans are particularly astute when it comes to producing and enjoying local oil.  


The best olive oil is Extra Virgin, which is made by pressing the best quality, fresh, healthy olives. This oil is not subject to any chemical process. It is 100% olive oil, and the taste, color and smell depend directly on the variety of olives used. 
Olive oil can be classified as extra virgin if it meets the requirements for “free acidity” expressed in oleic acid not more than 0,8g per 100g.
Virgin Olive Oil has free acidity of no more than 2g per 100g. This type of oil is usually not sold directly in stores, it is added to enrich other refined oils.
Lampante Virgin Olive Oil has free acidity of over 3g per 100g, and it is not suitable for direct consumption.  Only after refining can it be eaten raw or used for frying.


We have included for you, one of the very best Extra Virgin oils from this region...along with a DOP Vinegar which will compliment and salad or marinade.  

The Extra Virgin Olive Oil of La Chinata is obtained from a selection of olives collected in the region of Sierra de Gata, located northwest of the province of Cáceres. There, only the best olives are selected that guarantee the greatest quality.  



This Oil is characterized by four factors: 
- An intense yellow color with some traces of green.
- A sweet and flat flavor, without the itch or bitterness characteristic of other oils of southern Spain. 
- A very dense aroma of ripe fruit. 
- A very high content of fatty acids, which makes these Virgins unique among other local varieties.

A bowl of olives is full of vitamins and minerals. They contain significant amounts of provitamin A (carotene), B and E. In terms of minerals, olives carry abundant calcium, potassium, iron and phosphorus. 


Olives stimulate and aid in the digestive process.  They also contain a natural compound that increases the production of gastric juices and facilitates digestion. The ingestion of olives also facilitates the emptying of the gallbladder, making them a good complimentary treatment for diseases that affect the digestive system. 


Olives contain polyphenols— natural chemicals that reduce oxidative stress in the brain, and increase memory.   According to some studies performed by the University of Massachusetts, a daily portion of olives can improve memory by 25 per cent!
