Samorejo Cordobes Recipe

A Salmorejo Recipe straight from Cordoba

Authentic Salmorejo is simple to make, but your success will rely on having good
quality ingredients.

Salmorejo ingredients:
- bread crumbs from a local bakery
- 4 red tomatoes from a local farm
- 1 half of a local red pepper
- 1 half of a local green pepper
- 1 garlic clove
- 3 tablespoons of Extra Virgin Olive Oil
- 2 tablespoons of Sherry
- 1 Tablespoon of Sea Salt
- 1 glass of fresh Spring Water

Garnish ingredients:
- Iberian Ham Taquitos (little bits of ham)
- Chopped Hard Boiled Egg
- Chopped Parsley or Basil
-Extra Virgin Olive Oil to Drizzle

 

To prepare the veggies, simply slice the tomatoes and remove the seeds, then chop, along with the red and green pepper.  All the ingredients will then go into a blender to be incorporated into a nice thick puree.  When you are done, you can store the Samorejo in the refrigerator until you are ready to serve it (minimum 1 hour). 
To serve, garnish with Iberian Ham Taquitos, Chopped Hard Boiled Egg and a
Drizzle of Oil.  Basil or Parsley can be added as well.
